Aperol should be a deep orange color, so if it's paler than that, it may be starting to spoil. Give it a sniff. It should have a citrusy, herbal smell. If it smells off, chances are, it is. Finally, the taste. Aperol should be bright and complex. As it ages and oxidizes, it becomes flat and dull. Then it’s time to buy a new bottle!

When opened, keep Aperol refrigerated.

Once opened, Aperol can last around three months if refrigerated. If it’s not possible to refrigerate it, store it in a cool, dark place like a cupboard or, better still, a cellar, but be mindful that it won’t last quite as long.
